Ingredients:
2 cups cooked jasmine rice (preferably cold; day-old rice works best)
2 tablespoons vegetable oil
1 pound boneless, skinless chicken breasts or thighs, diced into small pieces
2 cloves garlic, minced
1 small onion, diced
1 cup frozen peas and carrots (or a mix of your choice)
2 eggs, lightly beaten
3 green onions, chopped (both white and green parts)
3 tablespoons soy sauce
1 tablespoon oyster sauce (optional, for extra flavor)
1 teaspoon sesame oil

Prepare the Rice:
If you don't have leftover rice, cook fresh rice, let it cool, and ideally refrigerate it for a few hours or overnight. Cold rice is less likely to become mushy when stir-fried.
Cook the Chicken:
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
